Soto singkong (Cassava Soup)

Soto Singkong is one of the typical Indonesian soup. This soup come from Probolinggo, East Java. Soto (soup of Indonesia)  is indeed not much different dressed with Soto in general. Only, his trademark that served with slices of cassava chips in it.
Soto was also served with Sambal cabe rawit (chili sauce)  for a delicious flavor and steady.
lets make it

Ingredients / spices:

  •     1 whole chicken, cut in 4 parts
  •     2,000 ml of water
  •     5 lime leaves, boned
  •     2 cm ginger, crushed
  •     2 bay leaves
  •     2 cm galangal, crushed
  •     1 stalk lemongrass, crushed
  •     5 teaspoons salt
  •     1/2 teaspoon ground pepper
  •     1 3/4 teaspoons sugar
  •     2 tablespoons oil for frying


Ground Spices:

  •     6 red onions
  •     5 cloves garlic
  •     3 eggs hazelnut, toasted
  •     1/2 teaspoon coriander

Complement:

    
300 grams of cassava, thinly sliced, fried
    
100 grams of glass noodles, soaked
    
100 grams of bean sprouts, brewed
    
2 stalks celery, finely chopped
    
2 eggs, chopped
    
5 cloves garlic slices, fried
    
5 pieces of fried Shrimps crackers, crushed 

Chili sauce
How to make:

  •  Boil chicken together lime leaves, ginger, greeting, galangal and lemongrass until boiling.
  •  Heat the oil. Stir-fry until fragrant spices.
  •  Pour in to the broth. Add salt, pepper, and sugar. Stir well. Cook until boiling. Remove the chicken.
  •  Shredded Chiken
  •  Arrange in bowl. glass noodles, bean sprouts.  
  •  Add cassava chips, Sliced egg, and shredded chicken. Pour Broth. Springkle celery, garlic fries, and shrimp crackers powder. 
  • Serve the Soto with sauces.
