SAMBAL BALADO (Balado Sauce)



Sambal this one is very well known in Indonesia. Chicken, beef, eggs, fish, tofu, tempeh, all matched with sambal this one.
It was spicy and distinctive. You have to try this sauce, if you claim to be a big fan of spicy flavor.




Ingredients:

  • 20 curly red chilies, wash
  • 10 pieces of red cayenne 
  • 8 red onions
  • 2  garlic
  • 2 leaves of orange, wash, waste leaves the bone
  • 1 fresh red tomatoes medium size, chopped
  • Salt, pepper, sugar, cooking oil for sauteing, broth chicken / beef taste


How to make 

  • Chopped red chili and red pepper.
  • Chopped garlic, onions, and fresh red tomatoes.
  • Add pepper powder, sugar and salt to taste.
  • Blend all ingredients in a container until well blended.
  • Prepare pan,  heat the cooking oil, put all the ingredients that have been mixed
  • Enter  lime leaves, chicken or beef broth, stir fry again until seasoning broth permeate.
  • Turn off the heat
  • Serve.

SAMBAL KRECEK

Krecek is the designation for KERUPUK (crackers) made from cow skin, goat or buffalo skin. krecek
taste is very distinctive. Crispy savory and if cooked into a Sambal taste is going to turn into a soft and chewy texture. and here's the recipe.









Ingredients

  • 200 g krecek 
  • 200 ml of the diluted coconut milk ½ coconut
  • 2 tbsp oil for frying
  • 5 large red chilies, thinly sliced
  • 5 cm galangal, crushed
  • 2 bay leaves
  • 2 tsp salt
  • 1 tablespoon brown sugar comb
  • 300 ml coconut milk from coconut ½
  • 50 g of red cayenne pepper, discard the stems


Puree chili sauce:

  • 20 pieces of red chili sauce
  • 10 curly red chilies
  • 4 red onions
  • 3 cloves of garlic
  • 2 large red chilies
  • 2 tablespoonsTerasi (shrimp paste)



How To Make:

  • Heat oil, saute ground spices, red chilli, galangal, and bay leaves until fragrant.
  • Season with salt and brown sugar. Pour coconut milk. Cook until boiling.
  • Enter krecek and red chili sauce. Cook until broth is absorbed. Lift. Serve.

Sambal Matah (Bali Sauce)

This  is a popular Sambal in Bali dishes.If you like spicy dishes, must try this Sambal. It is suitable for grilled fish or grilled chicken. Very easy to make.


Ingredients

Red chili  10 pieces. Chopped

  • 8 cloves Red onion. Chopped
  • 2 cloves of garlic. Chopped
  • 1 lemongrass opened, discard outer old enough to take part in white and then chopped
  • Terasi (Shrimp paste) ½ teaspoon. 
  • lime leaves 2 pieces. Clean and then cut thin. 
  • ¼ teaspoon salt. 
  • sugar ¼ teaspoon . 
  • Lime juice ½ tablespoon. 
  • Vegetable oil for frying, 3 tablespoons. 


How to make


  • Mix all Ingredients exept oil. 
  • Finally, heat the oil in until hot, pour to ingredient.Stir.And serve with grilled fish or grilled chicken. And don't forget Warm rice. 

Sambal Papaya

hm .. let's discuss a variety of typical Indonesian Sambal again. and now we are using something different. That is papaya fruit.

ingredients:


  •      1 piece of raw papaya, ± 400 g, peeled, roughly shaved
  •      1 tsp salt, to squeeze papaya
  •      2 tablespoons oil, for sauteing
  •      5 pieces of red onion, thinly sliced
  •      3 cloves garlic, thinly sliced
  •      30 walnuts, peeled, roughly chopped
  •      salt to taste
  •      ½ tsp roasted shrimp paste
  •      ½ teaspoon pepper
  •      2 cm galangal, crushed

How to Make:

  •      Mix the papaya with salt, then knead until limp. wash clean.
  •      Heat oil, saute onion, garlic until fragrant. Enter papaya, stir until wilted.
  •      Add walnuts, salt, shrimp paste, pepper and galangal. Cook until done. Lift.
  •      Serve with hot rice

Sambal Lado Mudo (Green peppers Sauce)

Ingredients:Sambal is one of the famous in Indonesia. This sauce has a special color is green. Taste spicy, savory, sour and challenging. For you who like spicy taste, you should try this Sambal, Sambal Lado Mudo

so Lets Make it

Ingredients:

100g large green peppers, remove the stems
5 red onions
1 tsp salt
1 tbsp lemon juice
50 g anchovies dungarees / fresh anchovies, fried (can be added)
2 tablespoons vegetable oil
3 green tomatoes, thinly sliced
1/2 tsp sugar

How to Make:

Steamed green peppers until soft. Lift.
Rough-rough mashed with onion green pepper, and salt.
Sprinkle lemon juice and stir well.
Heat oil, saute green peppers mashed, stir until fragrant.
Enter the green tomatoes and sugar, stir well. Lift.
Enter the anchovies and stir.
Serve

Sambal Kecap Petis (Soy sauce Petis)

This Sambal are no less delicious. And this time, there are different with Indonesian Sambal which is usually red, and is identical with red chili. This one dark colored and very well suited to be served with fried tofu. it's still spicy, but  sweet ofSweet Soy Souce.

So lets make the Sambal

Ingredients:

4 cloves of garlic
12 pieces of cayenne pepper
250 grams of peanuts, fried
1 tablespoon Petis Shrimp
½ tsp salt
150 ml of warm water
2 tablespoons soy sauce
1 tbsp fried onions


How to Make:


  • Puree garlic, cayenne pepper, fried peanuts, Petis shrimp, and salt. 
  • Give warm water, and mix well. 
  • Add soy sauce and fried onions.

Black Paste of Shrimp broth  or another seafood Broth
This Sambal you can serve with Fried tofu, very nice and delicious

Sambal Kemiri (sambal Pecan)


Sambal is one of Indonesia, from Central Java. Taste spicy, sweet and savory. It is suitable for those of you who like spicy and taste sensation. And

So let cook

Ingredients:

3 Pecan, , fried
2 Red onion
Red pepper, 2 pieces
Cayenne pepper, 6 pieces (according to taste)
Tomato, 1 piece
Salt, to taste
Brown sugar, 25 grams / taste
Cooking oil, 2 tablespoons

How to Make:

Mix all ingredients and blend.
Heat oil and saute until fragrant and cooked sauce.
Serve.

Sambal Seruit

Sambal is a dish that is similar to the sauce, but the rough shape, and it tends to be spicy. There are many types of Sambal favorite Indonesian people. Sambal Seruit one originating Sambal from Lampung.

Ingredients:
10 pieces of red chili
3 spring onions
1 tsp shrimp paste that has been burned
1 tsp salt
1 tbsp sugar
2 kuini mango, roughly chopped
How to Make:
Chili, onion, and shrimp paste with salt and sugar pulverized.
