Patin Brengkes Tempoyak (Palembang)

This dish is so sensational . aside marinade consisting of spices , there is also a tempoyak . which is the content of durian in fermentation and used as a spice . This dish really have a distinctive taste and smell .  so let's get cooking 

Ingredients:
500 gr patin fish
2 salam leaves
2 pcs lime
50 g tempoyak
1 tsp salt
50 ml of water
2 tablespoons oil for sauteing
banana leaves
and sticks 


Seasoning blended:
10 pcs red onion
5 pcs garlic
75 g red pepper
1 cm ginger
2 cm turmeric
1 tsp salt
1 tbsp sugar
2 lemongrass stalk, white part, sliced

How to make

  1. Clean fish, give thin slices on the fish, coat with lemon juice and salt.
  2. Heat oil, saute Seasoning, salam leaves until fragrant, enter tempoyak, and pour water. Cook until boiling, remove from heat, let cool.
  3. Sprinkle fish with seasoning sauteed, let stand for 1 hour until the flavors to infuse.
  4. Wrap the fish in banana leaves and ends with a stick pin.
  5. Steam the fish for 1 hour over low heat until cooked, lift, and fuel on the fire to dry.
  6. Serve with warm rice
